Boecker’s participation in the 14th Gulfood Salon Culinaire 2009 was not only amazing but gratifying too! Boecker, the Middle East largest HACCP consultancy and training company, was the hygiene jury again this year, as UAE is known to have Boecker as providing the number one jury committee. Boecker’s hygiene jury was satisfied by the awareness of the competing chefs while monitoring their hygiene practices in Salon Culinaire competition throughout the steps from receiving the raw material, storage practices, temperature control, segregation of raw and high risk food and also during preparation time especially through using color coded equipment, in addition to having good personal hygiene practices as wearing clean uniforms, hairnets and gloves. It was very noticeable that hygiene practices are improving with the passing years. Thus, this year’s competition superseded the previous ones and Jury had a difficult time deciding the winner. Nevertheless, we can always say that there are areas where everybody can improve since there is always something to learn each day! Congratulations to Chef Mohammed Reza from Renaissance Hotel, Dubai who was selected as winner 1st position on the last day of Salon Culinaire’s chef competition as the Most Hygienic Chef. Boecker’s representative presented trophy and certificate to the winner. Boecker congratulates all the participants and wishes them further success in their careers.
