What are bacteria? |
|
|
Bacteria are single cell microorganisms that can only be seen under a microscope. They are found everywhere (raw food, people, soil, air, water…). Most bacteria are harmless and some are essential. On the other hand some bacteria cause food spoilage and others, known as pathogens, cause illness including food poisoning.

What is a blast chiller? |

|
A blast chiller is equipment designed for the rapid cooling of food. Chilled air between 2 to 7 °C is circulating in a cabinet around the product.

What is Botulinum cook? |
|
|
The thermal process applied to low acid canned food in order to reduce the chance of survival of one spore of clostridium botulinum equivalent to 121°C for 3 min.

|
Who is called a carrier? |
|
|
A person who carries and may transmit pathogenic organisms without showing signs of illness.
|
|
What is cross contamination? |
|
|
Transfer of bacteria from contaminated food, mainly raw food, to high risk food by direct or indirect contact and by dripping.
